Phat Ash Bakes - Israel "Izzy" Erazo

 

I got to spend a lunch break with Israel "Izzy" Erazo, co-owner of Phat Ash Bakes in Orlando, FL, a bakery slingin small-batch cookies from scratch. With lots of love. And a lil' bit of Jersey sass.

I spoke to Izzy about how his wife, Ashley started baking up cookies and brownies and how they came up with the concept. We spoke about how her employer at the time was her first customer and how a friend helped name it and push them to make it real.  Izzy shared about their 200 flavors and how they started out as drop-offs in parking lots and customers ordering sliding into their DMs to now having a speakeasy and a website that ships worldwide.  We discussed the success and the growth of their social and how they took a chance on themselves and their delicious baked goods and it more than paid off.  We also may have talked about Taylor Ham Pork Roll sandwiches too.
