I got to spend a lunch break with Andrew Scala, the chef, and owner of JAM Hot Chicken- a Los Angeles & Nashville Inspired Hot Chicken joint proudly servin' the City Beautiful.
I spoke to Andrew about how love at the first bite of a Hot Chicken Sandwich at Howling Ray's in LA led him to open up and start JAM Hot Chicken. We discussed the keys to good spice levels and the 5 levels of heat that JAM Hot Chicken is bringing. We also discuss the secret to making a good sandwich. We discussed the best and most challenging parts of running a location. Andrew shared with me how the name came about and also how he started on IG DMs curbside picks-ups, to popups leading to a brick-and-mortar location in Hannibal Square.
