My guest this week is Andres Maldonado Fuertes, the owner of Brick and Butter, Nona Street Pizza, Eighty Twenty, and Nona Street Bistro

I discussed with Andres how he started Nona Street Bistro and then started Nona Street Pizza, Eighty-Twenty, and Brick and Butter.

We discussed where his love for cooking came from and the evolution of his concepts.  We also spoke about how he balances life, work, and family.  Andres addressed the importance of creating processes.  We also talked about a new venture that Andres is looking to start to help others start their culinary concepts.  

We also spoke about the good and bad about running a food truck concept and the difference between owning a small restaurant location.
